Instant Pot chili con carne

Such an easy, nutritious and tasty meal for those busy weeknights. Place it in the Instant Pot and it is ready in 30 minutes.

Intro:
Chili con carne is a universal comfort food. It is highly nutritious because packed with protein. You can add extra vegetables to make it even healthier. It is good served by itself as a soup topped with avocado or, as we often do at our home, you can serve it with some brown rice or quinoa (healthy carbs) for a more complete meal. This recipe only comes with a very little amount of chili powder to make it child-friendly but feel free to increase the amount if your family likes spicy food.

Cooking time: 40 minutes
Portions: 5

Ingredients:
500 gr of lean ground beef (10% fat)
2 tablespoons olive oil
1/2 red onion
1 garlic clove
2 tomatoes, chopped
1 red bell pepper, chopped
1 cup of mushrooms, sliced
1/2 cup tomato passata
2 tablespoons tomato paste
1 can kidney beans, drained and rinsed
2 tablespoons cumin powder
1 tablespoon paprika powder
1/4 teaspoon chili powder

1 teaspoon oregano
1/2 cup beef stock

Toppings:
Avocado
Green onion
Cilantro
Grated cheddar cheese
Red pepper flakes

Procedure:
1. Set your Instant Pot on Sauté mode (high), add olive oil and when warm sauté onion and garlic for a couple of minutes until golden.
2. Add the ground meat and brown it for 6-7 minutes until cooked through. Turn the Instant Pot off (press Cancel) and sprinkle the meat with salt and pepper.
3. Now add all the other ingredients to the Instant Pot: tomatoes, bell pepper, mushrooms, passata, tomato paste, kidney beans, all the spices and herbs and the beef stock. Mix well.

4. Place the lid on the Instant Pot, secure it well, close the air vent and set the function to pressure cooking / high. Set the timer to 20 minutes.
5. Past the cooking time, allow the Instant Pot to release pressure naturally (it will take 15-20 minutes).
6. When the flow valve drops, open the lid carefully, stir the chilli, and check if you need to adjust the taste with salt and pepper.
7. Serve hot with toppings such as fresh avocado, green onion, grated cheese, red pepper flakes and cilantro.


Notes:
If you don't have an Instant Pot you can use a regular pressure cooker. If you have a slow cooker you can slow cook it for 4-5 hours on high mode. If you don't have any of these you can cook it in a regular pot and let it simmer for 2 hours.
Leftovers can be kept in the refrigerator for 3 days in an air-tight container or they can be frozen for up to 3 months.
