Intro:
These scrambled eggs with feta are super easy to make and come together in minutes. You can add more vegetables like spinach if you like. 2 eggs will provide you with 12 gr of protein to start your day strong. Feta cheese is also a good source of protein as well as calcium while being lower in fat than other kinds of cheese.
Preparation time: 5 minutes
Cooking time: 5 minutes

Ingredients:
1 tbsp of olive oil
2 large free-range eggs
50 gr of feta cheese, cubed
1 medium tomato, chopped
1 tbsp of milk of choice
a small handful of moringa leaves (optional)
salt and pepper
Procedure:
1. Warm up oil in a frying pan on medium heat
2. Add feta and tomato and saute' for a couple of minutes
3. Whisk eggs separately with milk, salt and pepper and add to the pan with moringa or cilantro leaves if using
4. Cook while constantly mixing for 1-2 minutes
5. Serve with whole wheat toast and fruits or salad
Notes:
If moringa leaves are not available in your country you can swap them with cilantro.
