Dragon Fruit Açai Bowl In a Bread
Tired of the usual banana bread? Try it with dragon fruit and add ingredients you would usually use in a smoothie bowl such as chia seeds and açai powder!

Intro:
This dragon fruit bread was born as a total experiment, improvising some ingredients and quantities and the recipe turned out good at the first try so here I am sharing it with you. I got the inspiration from the smoothie bowl I sometimes make myself for breakfast with frozen banana, dragon fruit, Greek yogurt and açai berry powder and topped with superfoods such as chia seeds and coconut. Dragon fruit is high in carotene, vitamin C and iron, among many other vitamins and minerals.
A whole loaf only comes with a 1/4 cup of coconut sugar and a spoonful of maple syrup; it gets the rest of the sweetness from the fruits. No refined all purpose flour is used in the recipe: only whole wheat and coconut flour for extra fiber.
My 3-year-old daughter helped me baking it, it was good fun!

Ingredients:
1/2 red dragon fruit
1 small ripe banana
2 eggs, at room temperature
2 tsps vanilla extract
1/4 cup coconut sugar
2 tbsps Greek yogurt
1 large tbsp ghee
1 and 1/2 cups whole wheat flour
1/2 cup coconut flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon maple syrup
1/4 cup + 1 tablespoon desiccated coconut
2 tablespoons chia seeds
Optional: a few extra pieces of fresh dragon fruit
Procedure:
1. Preheat your oven to 280 degrees C (375 F).
2. Grease a loaf pan and line it with parchment paper.
3. Cut the dragon fruit and banana in small chunks and smash well with a fork in a large bowl.
4. Add eggs, vanilla extract, coconut sugar, Greek yogurt and ghee. Whisk everything together until smooth.
5. In a separate medium bowl sift together whole wheat flour, coconut flour, baking soda, baking powder and salt. Mix well.
6. Add the dry ingredients to the wet mixture and gently mix with a spatula or wooden spoon. Add in maple syrup, chia seeds and 1/4 cup desiccated coconut and mix again slowly a couple of times.
7. Transfer the batter to the loaf pan, drizzle with a tablespoon of coconut, top with some fresh dragon fruit and place on a rack in the centre of the oven.
8. Bake at 180C / 375F for 50-55 minutes, until a toothpick inserted in the middle of the bread comes out clean.
9. Remove it rom the oven and let it cool completely before slicing it. Enjoy it for breakfast or as a snack with your coffee or tea!
Notes:
This bread can be left out at room temperature the first day (tightly covered) but make sure to at least refrigerate it on the second day and consume it by the day after. for the best taste (you can slightly toast it if you prefer it warm). Because of the high fruit content it will not stay fresh for long time.
