Coconut crusted air fryer plantains

These air fryer plantains are inspired by fried bananas that are often served as snack in tropical countries. They are however on the healthier side since they come with added nutrients (coconut, egg) and are not deep fried.

Intro:
Everyone in the family will love this snack! It is yummy and filling and it is fun for the kids to make too! Moreover you can serve it with a dark chocolate ganache dip that they will go crazy for! The added healthy fats from the dark chocolate and cream will help keep their tummies full for even longer time. You can use plantains, small Saba bananas if you are in The Philippines or even regular ripe bananas.

Ingredients:
2 plantains or 5 Saba bananas
1 tablespoon coconut oil
3/4 cup coconut flour
2 eggs
3/4 unsweetened coconut flakes
1/2 teaspoon salt

For the dip:
100 gr dark chocolate (min. 70% cacao)
1 dl whipping cream

Procedure:
1. Cut the bananas or plantains in 1/2 inch-thick slices. Brush them slightly with coconut oil and sprinkle with salt.
2. Set up 3 shallow plates next to each other. Place coconut flour in the first one, whisked eggs in the second one and the coconut flakes in the last one.
3. Roll the banana slices first in the coconut flour, then egg and finally in the coconut flakes and lay them in the basket of your air fryer, making sure the slices do not touch each other. When the basket is full you can start air frying the first batch (most probably they will not all fit at once). Set the temperature to 190C and fry for 10 minutes, shaking the basket regularly and checking the colour. When the coconut turns slightly golden brown on all sides remove them from the air fryer and cook the second batch.
4. Meanwhile break the dark chocolate into pieces and place it in a glass bowl, cover with the cream and warm it up for 30 seconds in the microwave. Mix with a fork and continue heating it up and mixing in 30 seconds increments until the chocolate is completely melted and the sauce is smooth and even.
5. Serve the fried bananas with the dip, enjoy your snack!

Notes:
Leftovers can be stored in the fridge for a few days and reheated for 2-3 minutes in the air fryer before enjoying them.
