Hello everyone! I would like to introduce my first recipe by saying that my posts are short and go almost immediately straight to the point, which is... the recipe itself! When I search up recipes on the web myself I always immediately click on the "jump to recipe" button and skip all the lengthy introduction part. I wonder if anyone actually reads it? I will only give a short introduction regarding the main ingredients and nutrients, I will also make sure to add to my notes any comments relating to ingredients substitutions, storage, etc. at the bottom but you are always welcome to message me by email or social media if you have any doubt or question about it. I also encourage you to leave a comment if you have tried to make it and reviews are always welcome as well. So... Let's dive right in!

Intro:
Energy bites are one of my favorite snacks, you can make a whole batch in minutes and they will last for the whole week. They are great for kids' lunchboxes to take to school too! You can be creative and use any ingredients you have on hand. These apricot bites are super sweet but do not contain any added sugar. Apricots are a good source of fiber, potassium, phosphorus and beta-carotene which the body later concerts to vitamin A. They are amazing for eye health! Be mindful that although they are low in calories, dried apricots are relatively high in (natural) sugar. The nut butter and coconut however help reducing fluctuations in blood sugar and add healthy fats, more minerals and fiber. Feel free to experiment with different nut butters like almond or peanut butter. They add protein to the mix and help binding the bites together. I like cashew butter in this recipe because it has a milder flavor and smoother consistency. Make sure to use good quality/organic ingredients without any additives.

Cooking time: -
Portions: Makes 24 bites (8-12 portions)

Ingredients:
1 cup of dried apricots
1/2 cup of shredded unsweetened coconut
1/4 cup of cashew butter (or almond butter)
a pinch of salt
optional: 1/4 cup of mini dark chocolate chips

Procedure:
1. Mix all the ingredients except the chocolate chips with a food processor until a sticky dough forms
2. Gently mix in chocolate chips if using
3. Shape the dough into small balls with your hands
4. Refrigerate for at least 30 minutes before enjoying them

Notes:
Refrigerate in an air-tight container for up to a week or freeze for up to 2 months
